To enable Africans to effectively conserve and utilize their natural microbiological resources to enhance the traditional agro-food sector using environmentally sound processes that ensure the nutritional, health and marketability of processed food products.

  1. Procedures for the handling and maintenance of microbial cultures developed.
  2. Bank of microbial strains (biobank) installed
  3. Microbial strains isolated from traditional fermented foods, identified, characterized and stored in the biobank.
  4. Some strains with good technological properties tested at company level.
  5. Promoters of small and medium enterprises producing fermented foods trained on the development of new business models.
  6. Lyophilizer acquired and installed for the production of stabilized ferments to be distributed to companies producing fermented foods.
